A French cheese made from unpasteurized or pasteurized goat's milk. Typically coated with ash, this cheese is formed into small disks with one flat and one rounded side. The dark black, outer ash coating contrasts sharply with the pure white inner meat that is moist and semi-firm in texture, providing a somewhat nutty, goat flavor.
