A round pan with scalloped edges that is used to form a soft tortilla into a tortilla shell to make taco salads, creative desserts or similar recipes. This pan, which may also be referred to as a tortilla shell pan or a brioche pan, contains a small round bottom that rises up and out to create an sloped shell that is wide at the top and narrow at the bottom. The pan may be small or medium large in size to be used for the appropriate sized serving. Smaller sized pans are most often used to serve dessert-sized dishes or smaller individual salads for lighter meals, while the larger pans are used to create salads that become the main dish.

To prepare a tortilla shell with the pan, the soft flour tortilla is placed in the pan and pressed into the scallops pockets in the pan. The tortilla is baked at 325º to 375º for 5 to 10 minutes, removed from the oven and allowed to cool.
