A type of cheese that is used for frying or baking. Popular in Caribbean and South American regions, this type of cheese may be crumbly if fresh or elastic in texture and white or pale yellow in color. Cheeses made for frying provide a smooth somewhat salty flavor that goes well with grilled and baked foods. The cheese holds its shape when cooked or baked, not melting and becoming runny. Queso Blanco is a good substitute for this cheese, but it will not be a salty tasting. Many of the cheeses that are good for frying will be labeled as "queso para freir" or "queso de freir" to be used in baked foods or fried cheese dishes such as a popular fried cheese dish referred to as "queso frito."
