Escabèche

A food dish that is native to Spain. It consists of fish marinated in a tangy sauce of olive oil, vinegar, herbs, and spices. The fish remains in the marinade for approximately a day and is then poached or fried and allowed to cool. It is then chilled and served cold as an appetizer.
