The juice from unripened green grapes that have been processed without allowing it to ferment, so there is no alcohol content. Typically, grapes such as chardonnay and pinot noir that contain a high level of acidity and a tart fruity flavor are used to make verjus, a juice with a light delicate flavor.

Verjus is a good alcohol-free substitute for recipes requiring wine or vermouth replacing each 1/4 cup of wine or vermouth with 1 to 2 tablespoons of verjus in the recipe being prepared. When making pan sauces, begin adding a tablespoon of verjus just prior to serving and then if the desired level of acidity is not sufficient, continue to add more until the taste desired is achieved. Verjus is also a good substitute for vinegar or lemon juice.
