A type of garlic that is actually closer to the leek family than the garlic family, but still considered garlic. This variety of garlic is much larger than the common garlic and significantly milder in flavor. The strongest flavored is the American garlic while the Mexican and Italian garlic are milder, but still stronger than the Elephant garlic. Common garlic bulbs typically yield 12 to 16 small cloves while the larger Elephant garlic will yield 6 to 8 large cloves that are 2 to 3 times larger than the smaller cloves of the common garlic. Elephant garlic, is also referred to as Giant or Spanish garlic.

| Garlic scapes are the serpentine curls on the top of developing garlic plants, removed by growers to enhance growth of the underground bulb. They are milder than regular garlic, but still have enough 'zip' to satisfy garlic lovers. This quick and easy pesto, equally good on pasta or vegetables, is an ideal way to take advantage of their very short window of availability. |
