A common alcoholic beverage in Canada that is made from sweeter varieties of frozen apples, such as McIntosh or Spartan. The production of ice cider, which is similar in process to the production of ice wine with frozen grapes, involves the harvesting of apples either frozen on the tree or those harvested to be frozen in order to allow the natural sugars to increase within the fruit and become concentrated. The apples are then pressed to extract the juice, which is then fermented for 6 to 12 months. The resulting flavor, very similar to an apple cider, is sweet and somewhat tart with a cool refreshing overtone. This beverage is also known as apple ice wine.
