Alumette

A French term meaning "match" that refers to foods cut into very narrow strips and having a matchstick-like appearance. An alumette cut is most often considered to be 1/8 inch square and approximately 1 to 2 inches in length. Similar to a bâtonnet, which is a narrow cut 1/4 square or a julienne that is 1/16 inch square, the alumette cut is a size between the two.
