Ethyl Acetate

An ester byproduct of wine fermentation and/or the aging of wine. Esters’ are compounds that are produced when acid and alcohol are combined. Ethyl Acetate exists in all wine, and is a contributing factor of the slightly sweet, fruity, and vinegary characteristic. The characteristic is complementary unless there are extreme amounts.
