A Japanese term referring to a rice mixing bowl made of cypress wood that is used in the preparation of sushi rice. The wooden bowl is perfect in preparing the rice since it will absorb the excess moisture from the rice vinegar. This moisture also treats and conditions the wood during normal use. Rice spoons should be used with these bowls to prevent scratching.
