Characteristic of wine considered a fault if the bitterness dominates the aroma and/or taste of the wine. A small amount of bitterness can also be used to balance a wine. Considered one of the four basic tastes perceived by taste buds. The four basic tastes: sweet, sour, bitter, salty.
