Grouse

A type of game bird, common in cooler climates, that is similar in size to a small duck or pheasant. With a meat that is white and tastes similar to chicken or pheasant, a Grouse provides a tender and moist textured meat that can be grilled, roasted, or braised. Some of the common species of Grouse include: Black Grouse weighing up to 3 pounds; Blue or Dusky Grouse weighing up to 4 pounds; Pinnated Grouse (Prairie Chicken) weighing up to 4 pounds; Red Grouse weighing up to 2 pounds; Ruffed Grouse weighing up to 2 pounds; Sage Grouse weighing up to 8 pounds; Sharp-tailed Grouse weighing up to 4 or 5 pounds; and Spruce Grouse weighing up to 3 pounds.
