Skordalia

An Greek food dish traditionally made with a head of garlic, olive oil, lemon juice, vinegar, chopped almonds, and pureed or mashed potatoes. Bread that has had the crusts removed is often substituted for the potatoes. This food can be served as part of the main dish or sauce to accompany cooked vegetables, grilled meats, fish, and poultry, or it can be served as a dip for fresh vegetables and hard breads.
