A kitchen utensil that allows moist foods to be handled while excess liquid easily drains away through the slots or perforations formed in the blade. Often referred to as lifting spatulas, there are a variety of slotted spatulas available with each one built to serve different foods. Delicate items such as fried eggs or fish can require a wider or longer blade to allow the excess oils to drain away while holding the entire egg or filet on the spatula blade. Determine the types of foods most often prepared and buy spatulas to serve purposes most consistent with the food preparation.
