Top Loin Roast, Beef

A beef roast cut from the top loin muscle, which is the largest muscle of the short loin. The top loin roast is lean, very tender, and quite expensive. It is one of the most desirable oven roasts and is best when it is not overcooked. The top loin roast is also known as the New York strip roast, shell roast, and strip loin roast.
