A popular baked white cracker that is crispy, rough textured, and most often square in shape. It has a very mild to bland taste and is often served as a cracker to accompany soups, stew or chili. Also referred to as soda crackers, saltines can be made with a flour, water, seasonings and leavened with bicarbonate of soda. Or, they may be unleavened and made with flour, water and seasonings only. Many crackers have holes spread throughout the surface of the cracker, which is a method used to enable the cracker to be evenly baked so that the texture can be flat and thin as well as crispy.
