A traditional salad or condiment made in India that consists of yogurt curds combined with herbs, spices, and fruits or vegetables. Raita is also often made with smooth yogurt if the smoother texture is desired. Banana, mango, pineapple, and pomegranate are common fruits used for Raita, while vegetables such as cucumbers, eggplant, tomatoes, onion, or spinach are also typical. All of the ingredients are then seasoned with herbs and spices such as mint leaves, curry, cumin (jeera powder), coriander seeds, ginger, pepper, chili powder, or garam masala. Raita is often made to accompany lamb or other meats in order to balance and often reduce the spicy effects of the foods being served.
