Taboule

A traditional Middle Eastern salad dish consisting of cracked bulgur wheat, parsley, mint, chopped tomatoes, scallion, lemon juice, pepper, olive oil, and salt. Additional ingredients may include cinnamon, allspice, cucumbers, and ripe black olives. Depending on the recipe, Taboule may be brown and tan in color or very green if an abundance of mint and parsley were added. When served, it is placed on a bed of cos lettuce or eaten with the use of the salad leaf as a wrap or scoop. Breads often served with Taboule may be either pita bread or lavosh. Also referred to as Tabouli, Tabouleh or Tabbouleh, a typical Taboule salad will be served cold. If bulgur wheat is not available, couscous can be used as a substitute.
