Matambre

A traditional meat dish served in South America that consists of beef (flank steak or similar) that has been spread with a mixture of ingredients and rolled into a log shape to be cooked together. This food dish is most often poached, but it can also be grilled. The ingredients wound into the rollup of meat may consist of eggs, nuts, vegetables, breadcrumbs, ground pork, calves brains, spinach and various seasonings such as onion, cloves, oregano, pepper, and nutmeg.
