Potage Saint-Germain

A traditional French soup that combines fresh peas and water with finely chopped shallots to make a thick creamy soup. Other ingredients may also include bits of meat such as ham, shredded lettuce, carrots, celery, onions, and garnished with croutons. Whipped cream or heavy cream may also be added to make it a cream of pea soup. It may also be referred to as fresh pea soup, cream of pea soup, or potage St. Germain.
