Souse of Sulz is a cooked meat specialty, which is gelatin based and made basically the same way as headcheese, except it is flavored with a vinegar pickling liquid. The pickling liquid consists of dill pickles and sweet red peppers, which gives the meat a sweet, but tart, flavor. Sometimes bay leaves are added to the mixture. Souse is a common term used to refer to pickeled foods.
