Refers to various types of beans that have been dried in order to preserve them for future use. Among the most popular dried beans are navy, black, pinto, and kidney, which are available in bulk or in small packages. Dried beans will last for months if they are stored in an airtight container. In order to use dried beans in a recipe, they must be rehydrated by soaking them in water, usually overnight, so that they become moist and tender. A large variety of beans are available for use in salads, soups, stews, side dishes, and main dishes.
