A French cow's milk cheese that is off-white in color and has a savory outer layer that covers and interior area which is dryer and saltier. It is cured and allowed to ripen in an unusual way. The cheese is completely covered with ashes for 30 days or more. It is removed from the ashes and any remaining ashes are brushed from the surface of the cheese before it is served.
