Figue Cheese

A French unpasteurized goat's milk cheese that gets its name from the fact that when it is produced, it is shaped like a fig. The flavor is mild, but tangy and it is much like the more familiar goat's milk cheeses such as chevres. Figue cheese is often sprinkled with herbs or salt and ash. It is used mainly as a snack cheese, in salads, and for grilling.
