(Scientific Name: Stropharia rugosoannulata
) An umbrella shaped mushroom with a cap that may grow up to 12 inches in diameter but is generally in the range of 2 to 6 inches. Younger mushrooms have edges around the cap that curve in but as it matures the cap becomes almost flat. Beginning as a reddish brown colored species, the Rough Ring Mushroom dries as it matures and turns a light yellowish brown. The flesh from the cap and stem is white with a thick, firm, crisp texture providing a flavor that is similar to a raw potato. All parts of the mushroom are edible and because of its size and texture, it works well to broil, grill or bake this mushroom. The Rough Ring may also be referred to as a Wine-cap Stropharia mushroom.
The Rough Ring Mushroom can be cleaned simply with a soft brush or cloth, since it primarly grows on decaying wood where it is not affected much by debris. It stores well in the refrigerator for approximately a week. It can be preserved by pickling or by freezing after it has been sautéed or blanched, but it is not a variety that can be dried effectively.
