Juustoleipa Cheese

A Finnish cheese made with cow or reindeer's milk. After only a few days of ripening, the cheese is toasted over a fire to give the surface a slightly charred appearance and flavor. Beneath the crust, the cheese is smooth and light with a very mild flavor. It is a favorite at breakfast in Finland and it is often served as a dessert dish, accompanied with jam.
