An egg shaped fruit that has a smooth thin skin, which varies in color, including red, gold and amber. The red variety has a reddish-golden flesh, which is more tart than the gold and amber varieties. The gold and amber varieties have a slightly tart flavored flesh, which is gold in color. The fruit is approximately three inches in length and contains several small seeds. With the tamarillo's tangy but sweet flavor it is used as a fruit or vegetable and is best when cooked. Before using, the skins should be removed because of their bitter flavor. Tamarillos are served with meat and in sauces, salsas and relishes. Also known as "tamarillo."
