Stone Crab

A mature stone crab has an oval body that is dark, brownish red, and mottled with gray spots and it has two huge claws. Only the meat from the claws is consumed. The claws are removed and then the crab is returned to the water so that it can regenerate new claws. The meat is very nutritious and it is considered a delicacy. It has a firm texture and is similar to lobster in flavor and appearance. Stone crab is usually boiled and served in its shell and is generally cooked immediately after it is harvested, otherwise the meat will stick to the shell.
