A variety of parsley, also known as Flat Leaf Parsley, that has dark green flat leaves and a somewhat strong peppery flavor that is more intense than other varieties of Parsley. Italian Parsley is best used in cooked foods such as soups and stews, since it can withstand heat and retain its flavor better than Curley Parsley. As a whole herb, it can be used nicely as a garnish. When chopped, it adds a pleasant flavor to salads, sauces, soups, stews, pasta, and some vegetable or potato dishes.
