A lean, round saltwater fish with flaky white flesh which has a firm, moist texture and a mild, sweet flavor. It can be prepared by broiling, baking, steaming or poaching. Halibut, trout or whitefish may be used as a substitution in most recipes. To check the fish for doneness, use the tip of a sharp knife and cut through the thickest part of the fillet. If the fish has been properly cooked, the meat will appear opaque but will still be moist.
