Scandinavian Flatbread

A traditional Swedish, Finnish or Norwegian bread made from a dough with rye flour or combinations of flours such as wheat, barley, and potato and leavened with leavening agents. Available in round, rectangular or triangular shapes, flatbreads such as Knäckebrot are common types served in Scandanavian homes. Very thin and crispy-textured, like a cracker, flatbreads are often served as an appetizer with gjetost cheese or with soups, salads, and main dishes. This type of flatbread may also be referred to as a crispbread.
