Edible pumpkin seeds that are popular in Mexican cooking. They are available with or without the hulls and raw, roasted and salted. When the hulls are removed, a dark green, delicate flavored seed remains that is even more flavorful when roasted and salted. Pepitas are available in Mexican markets, health food stores and some supermarkets.

These crunchy little morsels make an excellent snack food and are delicious plain or spiced up. A Halloween pumpkin or Thanksgiving squash can provide the raw materials.
