Marrow

The fatty tissue found in the cavities of animal bones, which is considered in Europe to be a delicacy. The soft fatty tissue is light and digestible, having the same calories in it as beef fat. The marrow is generally cooked in the bone and the removed and eaten, but it can also be used to add flavor to soup and stews.
