Cornish Game Hen

A young chicken that is cross between a White Rock species of chicken and a Cornish chicken. Known for its tender, rich meat and small size, the Cornish Game Hen is raised to an age of 4 to 5 weeks old. At this point the bird weighs 2 to 3 pounds which is the best size for processing into so that it can be prepared as a single serving to be broiled or roasted in the oven. Another name given to this bird is a Rock Cornish Game Hen. The term Game was added by food marketers who felt that it provided a distinctive and appealing title that would help sell the product to consumers.
