Refers to tubular pasta shells about four inches in length that are deep-fried and prepared as a traditional Italian dessert. The shells may be filled with ricotta cheese and various ingredients such as citron, nuts, or chocolate. When made as a delicate pastry shell created from flour, eggs, butter, sugar, and other ingredients, cannoli can be stuffed with a variety of sweet fillings such as whipped cream, mascarpone or other light and fluffy fillings for a sweeter version of this pastry.
