A soup that is most often associated with the central and southern regions of Thailand. Made from the milk of coconuts, this soup may contain meat such as chicken or shellfish or as a subsitute, tofu may be added. In addition, a variety of vegetables such as sweet potatoes, carrots, onions, shallots, green beans, and mushrooms, as well as garlic, soybeans, and various seasonings may be added. In Thailand it is common to refer to Coconut Soup as Tom Kha Phak or Thai Coconut Soup. As different recipes for this soup are created, some variations include fish or different types of squash such as pumpkin, and hot spices such as bits of red peppers or ground pepper. Depending on the contents, Coconut Soup can be very filling and an enjoyable mixture of different ingredients.
