A sauce that may be prepared from the juices and drippings of cooked meats such as beef, pork, poultry, or veal. In addition to using cooked meats, there are also a variety of gravy mixes available that are manufactured as a combination of ground ingredients and artificial flavoring ready to be prepared simply by adding liquid and heat. The "instant" gravy mixes are the easiest to prepare and taste very similar to a traditional meat gravy, so they have become a good substitute for gravies prepared from meat drippings. Both meat gravies and gravy mixes are usually blended with water, wine, milk, or additional meat stock when preparing the gravy. In addition, gravies are often thickened with cornstarch or flour before being served as a popular accompaniment for topping meat and potato dishes.
