Leg of Lamb for Four Recipe

  • 3 pounds lamb leg roast, bone in
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 2 tablespoons Dijon mustard
  • clove garlic

  • A simple way to turn this into a meal suitable for 4 or 5 diners is to have your butcher cut a whole leg in half - or do it yourself: a hacksaw with a clean blade makes this an easy task with either fresh or frozen meat. If cutting a frozen leg, don't thaw it. Rewrap the unused half and return it to the freezer.
  • Trim excess fat and silverskin from the meat.
  • Press or mash the garlic and mix to a paste with soy sauce, mustard and olive oil. Pat this mix over the meat. At this point, it can stand for several hours or be roasted immediately. However, make sure the meat is completely thawed and has reached room temperature before putting it into the oven. Such a small roast may cook unevenly if the interior is too cold when roasting begins.
  • Pre-heat oven to 375.
  • Put lamb on a rack in a shallow baking pan or dish and roast until a meat thermometer reads 140 - 145. Figure on 1 to 1 1/2 hours, but begin checking at 1 hour. Actual cooking time will depend on the size, shape and temperature of the meat and the accuracy of your oven.
  • Remove from oven and cover loosely with foil. Allow the meat to rest for 10 minutes so the juices can redistribute.
  • Carve and serve, using any pan juices as a pour-over sauce.
  • Tip: Warming both the serving plate and the diners' plates will help to keep the meat an ideal eating temperature.

  • 2 pounds small red potatoes, scrubbed and cut in half (do not peel)
  • 3 tablespoons olive oil, more if desired
  • SEASONINGS TO TASTE:
  • Garlic salt
  • Fresh ground pepper
  • Salt
  • Dried rosemary, crushed
  • Dried parsley
  • Dried or fresh minced garlic
Directions
  • Preheat oven to 425 degrees F.
  • Fill large bowl with cut potatoes.
  • Drizzle oil and seasonings over potatoes, stir to coat.
  • Place potatoes in a single layer on a foil lined baking sheet, which has had the foil sprayed with non-stick cooking spray.
  • Bake uncovered 40 to 45 minutes, turning half way through baking time. Baking time may vary depending on the size of the potatoes.
  • Potatoes should be a light golden brown and tender.
  • Serve warm.
  • Experiment with other seasonings if desired.

  • 1 pound carrots
  • 1/2 cup finely chopped onion
  • 3 tablespoons chopped dried apricots or golden raisins
  • 3 cloves garlic, or more
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • freshly ground pepper, to taste
  • 1 tablespoon canola oil, or other vegetable oil
  • 1/2 cup water
  • plain yogurt (optional)
Directions
  • Peel carrots and slice crosswise into 1/4 inch thick 'coins'. Set aside.
  • Finely chop onion, garlic and apricots (or raisins). Add ginger, chili powder, salt and pepper and mash together, using a fork or a mortar and pestle.
  • Heat oil in skillet and add onion and spice mixture. Cook and stir for a minute or two. Add carrots and stir to coat with spices. Add 1/2 cup water, cover pan and cook until carrots are just tender, 8 - 10 minutes.  Remove cover and continue cooking, stirring occasionally, until liquid has evaporated and carrots have begun to brown a little.
  • Taste for seasoning and serve--with a dollop of yogurt, if desired.

Tzatziki Sauce with Mint Recipe

  • 16 ounces plain yogurt
  • 4 garlic cloves
  • 6 mint leaves
  • 1 pinch kosher salt
  • 1 tablespoon olive oil
  • 2 teaspoons red wine vinegar
  • 1 cucumber - medium size
Directions
  • Line a colander with paper towels and pour the yogurt into the paper towels. Allow this to sit, in a bowl for moisture to drain into, in the refrigerator for at least 2 hours or overnight. This will allow any excess moisture to drain from the yogurt and help the sauce from becoming too watery.
  • Mince the 4 garlic cloves and place in a medium size bowl.
  • Add a pinch of salt.
  • Remove the mint leaves from the stem and gather them together. Finely mince the mint leaves and then add it in with the garlic.
  • Pour the oil and vinegar in the bowl with the other ingredients and stir together.
  • Peel the cucumbers and cut out the seeds. Dice into 1/4 inch pieces.
  • Using several paper towels, squeeze the excess moisture from the cucumbers and then add them in with the other ingredients.
  • Remove the yogurt from the refrigerator and gently stir it into the other mixture until well blended.
  • Store the tzatziki sauce in an airtight container in the refrigerator for up to a week.

  • 1 can pineapple tidbits - 20 oz. can
  • 1 mango - peeled and cubed
  • 4 kiwis - peeled and cubed
  • 2 bananas - peeled and sliced
  • 1/2 cup coconut
  • 6 ounces pina colada yogurt (can use low fat)
Directions
  • Allow pineapple to drain well. Pat with paper towels to soak up some of the excess juice.
  • Prepare the mango, kiwi, and bananas; place in a bowl.
  • Add the drained pineapple.
  • Toast the coconut. Reserve 1 to 2 tablespoons of the toasted coconut and add the rest to the bowl of fruit.
  • Add the Pina Colada yogurt to the fruit and gently stir until al the fruit is evenly coated.
  • Pour it into your serving bowl and sprinkle it with the reserved coconut.
  • Refrigerate until ready to serve.

  • 1 box yellow cake mix
  • 1/3 cup canola oil
  • 1/4 cup water
  • 1 teaspoon rum extract (or coconut rum)
  • 1 can crushed pineapple - 8 oz., undrained
  • 3 eggs
  • FROSTING:
  • 1 can whipped vanilla frosting - 12 oz.
  • 1 teaspoon coconut extract
  • 1 teaspoon rum extract (or coconut rum)
  • 1 cup shredded coconut
Directions
CUPCAKES:
  • Preheat the oven to 350° F. Place paper muffin cups in the muffin tins.
  • In a large mixing bowl, combine the cake mix, canola oil, water, run extract (or coconut rum), pineapple with juice, and eggs. Beat on low for 30 seconds and then on medium for 2 minutes.
  • Pour even amounts of batter into 24 muffin cups.
  • Bake for 13 to 20 minutes, depending on your oven and whether you are using shiny metal pans, dark pans, or non-stick pans. Check for doneness by sticking a toothpick in the center of the cupcake. The toothpick will come out clean when they are done.
  • Cool for 10 minutes and then remove from the pan. Place on a cooling rack until completely cooled.
FROSTING:
  • Add the coconut extract and the rum extract (or coconut rum) to the frosting. Stir until evenly blended.
  • Spread the frosting on the cooled cupcakes and then dip them into shredded coconut.
  • Store lightly covered at room temperature.

Spread about 2 tablespoons of mayonnaise mixture on warm tortilla. Top each tortilla with tomato, turkey and lettuce. Roll up each tortilla tightly. Cut each roll into 8 pieces. Secure each piece with a cocktail toothpick.

Serve immediately or cover tightly and refrigerate until serving time.

Ingredients
  • 1 pound ground beef or turkey
  • salt and pepper, to taste
  • 1 teaspoon cumin
  • 1 can ranch style beans (15 oz can)
  • 1 can cream of chicken soup
  • 1 can Rotel tomatoes, original or hot
  • 3/4 package Velveeta cheese, sliced thin
  • 16 ounces sour cream
  • 1 packet dry Ranch dressing mix
  • 1 package flour tortillas
Directions
Preheat oven to 350 degrees F.

Brown ground beef or turkey with spices; drain.

In 9x13 baking dish, spray bottom and sides with Pam. Cover bottom with half of the tortillas.

On top, layer meat, beans and Velveeta.

Top with the remaining tortillas.

In mixing bowl, combine soup and Rotel; mix well. Put this mixture on top of the tortillas.

Bake for 30 minutes until bubbly.

Meanwhile, combine sour cream and ranch dressing mix.

Cut into squares and serve hot, topping each with lettuce, hot sauce, black olives, tomatoes and sour cream mixture.

Directions
Cook chicken strips in a separate pan in oil, using salt and pepper to season.

Meanwhile, cook vegetables in simmering water until crisp-tender; drain.

When chicken is cooked, add 2 cups water, soy sauce and sugar. Mix until sugar is dissolved.

After vegetables are cooked, add them to the chicken and soy sauce mixture. Bring to a boil, then simmer.

Take 1/2 cup water, add flour and stir until flour is dissolved. Add to the simmering chicken and vegetable mixture. Simmer and stir occasionally for 5-10 minutes. Serve over rice.

  • 12 ounces mixed vegetables
  • 2 eggs, beaten
  • 2 teaspoons water
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce, divided
  • 2 1/2 cups cooked rice
  • 1 tablespoon scallions or small onion, chopped
Directions
Steam vegetables until almost tender.

Beat egg with 2 teaspoons of water.

Heat a large, nonstick pan or wok on medium-high. Spray with oil. Pour egg in a thin layer. Cook, stirring to scramble the egg. Remove the egg from the pan and set aside.

Spray pan again and reduce heat to medium. Put sesame oil, 1 tablespoon soy sauce and rice in the pan. Stir to incorporate the sauce. Let the rice sit for a few minutes and then stir it. Continue until the rice is dry and less clumpy.

Stir in scallions, vegetables and eggs. Add the remaining soy sauce and stir together. Serve immediately.

  • 1 cup green onion

  • 1/2 cup vinegar
  • 2 teaspoons soy sauce
Directions
Crush Ramen noodles before toasting. Toast noodles, almonds and butter in frying pan until golden brown. Set aside.

Chop green onion and cabbage.

Combine oil, sugar, vinegar, soy sauce and Ramen noodle seasoning packets.

Just before serving, mix all ingredients together.

  • mustard
  • ketchup
  • 1 pound ground beef

  • Shredded Mozzeralla and Cheddar cheese or a pizza blend
Directions
  • Brown ground chuck (or hamburger) in pan with garlic powder, salt, pepper, Worcestershire sauce, and onion powder.
  • While browning meat, spread pizza crust out evenly on the pizza stone (or pan) and then spread the ketchup and mustard evenly on top.
  • When meat is done, place on top of ketchup and mustard. Sprinkle the entire top with the cheese.
  • Bake at the temperature stated on the pizza crust package. Bake for 10 minutes and then put under broiler to melt and brown cheese.
  • Serve and enjoy.

  • 4 teaspoons McCormick® Grill Mates® Barbecue Seasoning
  • 1 can (8 ounces) tomato sauce
  • 1 pound fresh pizza dough %3cu%3eor%3c/u%3e frozen dough, thawed %3cu%3eor%3c/u%3e 1 prepared thin pizza crust (12-inch)
  • 1 tablespoon olive oil
  • 2 cups shredded mozzarella %3cu%3eor%3c/u%3e Monterey Jack cheese, divided
  • 1/4 cup sliced red onion
Directions
1. Sprinkle both sides of chicken with 3 teaspoons of the Barbecue Seasoning. Grill over medium heat 5 to 7 minutes per side or until chicken is cooked through. Cut into bite-size cubes. Mix tomato sauce and remaining 1 teaspoon Seasoning in small bowl.

2. Stretch or roll dough on floured baking sheet to a 12- to 14-inch round, about 1/4-inch thick. Brush top of dough with oil. Place oiled-side down on the grill. Close lid. Grill over medium heat 1 to 2 minutes or until grill marks appear on the bottom of the crust. Carefully flip crust over using tongs or spatula..

3. Spread seasoned tomato sauce on crust. Layer with 1/2 of the cheese, grilled chicken, remaining cheese and onion. Close lid. Grill 3 to 4 minutes longer or until cheese is melted and crust is browned. (Check pizza often to avoid burning. Rotate pizza, if necessary.) Slide pizza onto baking sheet. Slice and serve immediately. Sprinkle with additional Barbecue Seasoning, if desired.

Test Kitchen Tips:

  • Pizza dough may be purchased from the prepared deli or dairy section of the supermarket. If frozen, thaw dough in refrigerator.

 

  • For ease in stretching or rolling, let dough stand at room temperature 1 to 2 hours.

 

  • Fresh pizza dough may also be purchased from your local pizzeria.

  • 1 3/4 cups sugar
  • 1 1/8 cups brown sugar
  • 3/4 cup peanut butter
  • 2 eggs
  • 3/4 cup flour
  • 2 teaspoons baking soda
  • 1/4 cup milk
  • 3 1/2 cups oatmeal
  • 2 teaspoons vanilla
Directions
  • Mix all of ingredients together in a large bowl.
  • Place in an 11 x 17-inch pan and bake for 20 - 25 minutes at 350° F.
  • When you remove the bars from the oven, they won't look done, but the bars will set up while they cool.
  • Make a basic powdered sugar frosting if you would like to frost the bars, but add 1 tablespoon (or more to taste) of peanut butter to the frosting.
Note: If you prefer bars that are a little less doughy, add 5 or 10 minutes to the baking time.

  • 1 onion, chopped
  • 3/4 cup butter or margarine
  • 1/2 cup flour
  • 4 cups chicken or vegetable broth
  • 3 cups milk
  • 1 cup whipping cream
  • 1 tablespoon dried basil
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 5 cups vegetables (broccoli, carrots and cauliflower), cooked
Directions
In large kettle, sauté onion in butter until tender.

Add flour; cook and stir until bubbly.

Gradually add chicken broth; cook and stir until thickened, about 5 minutes.

Whisk in the milk, cream, basil, salt, pepper, and garlic powder. Add cooked vegetables. Cook gently until heated through. Do not boil.

Ingredients
  • 2 packages Romaine lettuce or 1 large head iceberg lettuce
  • 1 red onion, sliced
  • 2 cups flavored croutons
  • DRESSING:
  • 3/4 cup Oil
  • 1/2 cup Mayonnaise
  • 1/3 cup vinegar
  • 1/3 cup sugar
  • 1 teaspoon mustard
  • 1 teaspoon soy sauce
  • 4 cloves garlic, minced
  • 1/2 teaspoon Salt
  • 1/4 cup water
  • 1/2 cup shredded Parmesan cheese
Directions
  • Tear the lettuce into bite size pieces and place in a bowl. Add the onion slices and Parmesan cheese (reserve a little cheese to sprinkle on top); toss to mix in with lettuce.
  • Blend the dressing ingredients together; pour over combined lettuce and onion. Top with croutons and reserved Parmesan cheese.

Braided Golden Potato Bread Recipe

Ingredients
  • 1 large Yukon Gold potato
  • 1 small onion
  • 1 egg
  • 2 tablespoons butter - softened
  • 1 tablespoon honey or light corn syrup
  • 1/4 cup grated Parmesan
  • 1/4 cup chopped fresh parsley
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 package yeast - dry active, 1/4 oz.
  • 1 cup milk - warmed to 70 - 80 degrees
  • 4 cups bread flour
  • TOPPING:
  • 1 egg - beat lightly for egg wash
  • Extra parmesan cheese
Directions
  • Peel and cut potato into cubes. Chop the onion and place it in a small saucepan with the potato cubes. Cover with water and bring to a boil. Reduce the heat once it is boiling; then cover and simmer until potatoes soft when poked with a fork (10 to 15 minutes).
  • Drain the water off and then mash the potatoes and onions together until smooth; set aside. (Note: you need about 3/4 cup of mashed potatoes & onions to add to this recipe.)
  • In a large mixing bowl, combine the egg, butter, honey or syrup, cheese, parsley, salt, pepper, yeast (dry-do not mix with water), warm milk, mashed potato mixture, and 3 cups of flour. Mix all ingredients together until well mixed.
  • Add enough of the remaining cup of flour to make the dough just stiff enough to be able to knead. Mix in with hands if necessary.
  • When just stiff enough to knead, place the dough on a lightly floured surface and knead the bread for approximately 8 minutes.
  • When done kneading, divide the dough into 3 even sections. Working on the floured surface, roll and form each section into an 18" long rope.
  • Place the 3 ropes on a large greased baking sheet. Gather the 3 ropes at one end and then begin to braid the sections together. When you have the entire loaf braided, pinch each end together and tuck under.
  • Cover the loaf with a light kitchen towel and place the loaf in a warm place to rise. Allow the loaf to rise to double in size. This should take approximately 60 minutes, depending on how warm the area is where it is place.
  • Once the loaf has double in size, brush the top with the egg wash and sprinkle with extra parmesan cheese.
  • Preheat oven to 350° F. and bake for 30 to 35 minutes or until it is a nice golden brown.
  • When done, remove it from the baking sheet immediately and place on a cooling rack.
  • When cooled, it is ready to slice and serve.

Swiss Cheese Chicken Recipe

  • 8 boneless chicken breasts
  • salt and pepper, to taste
  • 8 slices Swiss cheese
  • 1 can cream of mushroom soup, undiluted
  • 1/2 cup white wine
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon celery salt
  • 1 package seasoned croutons
  • 1/2 stick butter, melted
Directions
Preheat oven to 350°. Grease baking dish.

Lightly salt and pepper the chicken and place in a baking dish. Cover the chicken with the cheese slices.

Mix soup, wine and seasonings; pour over the chicken. Top with croutons. Pour melted butter over stuffing.

Cover dish with foil. Bake covered for 30 minutes.

Remove cover and bake additional 30 minutes.

  • Place in the refrigerator until ready to serve. Add in the banana slices just before serving and fold carefully into the mixture.

  • 2 tablespoons milk
  • 1/2 cup colored sprinkles
Directions
  • Preheat oven to 350° F.
  • Combine the flour, soda, and salt in a small bowl and whisk to mix evenly; set aside.
  • In a large mixing bowl blend the butter and sugar together until fluffy.
  • Add the egg and vanilla; mix until evenly distributed.
  • Add the flour mixture to the batter and beat until well blended; add milk and beat to blend in.
  • Add the sprinkles and mix just until they are evenly distributed.
  • Scoop approximately a 1-inch ball of dough and drop on a cookie sheet. Place cookies about 2 inches apart. Flatten the cookies with the bottom of a glass that has been dunked in sugar.
  • Bake for approximately 7 to 8 minutes or until the edges are lightly browned. Remove and place on a rack to cool.
