Ingredients
  • 4 ribeye steaks
  • 1 tablespoon Montreal steak seasoning
  • 6 tablespoons olive oil, divided
  • 5 cloves garlic, minced, divided
  • 1/2 teaspoon pepper
  • 1/4 cup barbecue sauce
  • 1 pound mushrooms, sliced
  • 2 green onions, chopped fine
  • 1/3 cup sherry
  • 1/2 teaspoon dried tarragon
  • 3 tablespoons half & half
  • salt & pepper to taste
Directions
Mix steak seasoning, 3 tablespoons olive oil, 3 cloves minced garlic, pepper and BBQ sauce. Divide in half, saving half for grilling. Brush both sides of steaks with remaining mixture. Refrigerate 2-3 hours.

Bring steaks to room temperature before cooking.

To make the sherry mushrooms, heat 3 tablespoons olive oil in a large skillet over medium heat. Add green onions and cook until soft. Add 2 cloves minced garlic and cook 1 minute. Add mushrooms and increase heat to medium-high. Cook 5-7 minutes, stirring often, until mushrooms give off most of their liquid. Add sherry and tarragon, cooking until liquid is absorbed and mushrooms begin to brown and caramelize. Add cream into mushrooms and remove from heat and cover.

To cook the steak, heat grill to medium-high heat. Place steak on grill and sear for 1 minute. Flip and sear the other side 1 minute longer. Now turn off burners on one side the grill for indirect cooking. Move steaks to the "cool" side of the grill (the one without any burners running underneath). For medium-rare steaks, grill for 6 minutes, then turn and brush the other side of steak with remaining garlic/olive oil mixture. Grill another 6 minutes, and then remove from grill.

Let rest a few minutes before serving and cover steaks with warm mushroom mixture.

  • 1/2 cup unsalted butter, melted
  • 1 package dry onion soup mix
Directions
Preheat oven to 350 degrees F.

Slice raw potatoes into 1/2 inch slices, not cutting al the way through the potato. Place on individual foil sheets.

Combine melted butter and soup mix. Spoon mixture over potatoes. Wrap in foil and bake until done, approximately 1 hour.

NOTE: These can also be done on a charcoal grill.


Good Grilled Corn Recipe

Sweet and natural, corn should taste like it just came from the field. Use the freshest corn you can get and treat it gently.

Directions
Soak corn, unhusked, in sink filled with water for at least 30 minutes.

Open husk; remove what silk you can. Spread 1 teaspoon of soft butter on each ear of corn. Close husk.

Grill corn over medium-high grill for 20 minutes or until done, turning every 5 minutes.

  • 4 cups blueberries (2 pints)
  • TOPPING:
  • 1 cup sugar
  • 2/3 cup flour
  • 2 teaspoons cinnamon

  • 3/4 cup butter, cold
Directions
  • Butter the bottom of a 9" x 13" cake pan. Preheat the oven to 350°F.
  • In a mixing bowl, beat the butter and sugar together until light and fluffy. Add the eggs and vanilla to the butter and sugar mixture and then beat until mixed in evenly.
  • In a small bowl mix the flour, baking powder and salt together. Gradually add the dry ingredients to the batter, alternating with the milk. Mix until mixture is all blended.
  • Pour the batter into the buttered cake pan. Spread batter out evenly to cover bottom of the pan.
  • Go through the blueberries and discard any blemished or spoiled berries. Spread the blueberries evenly over the batter.
  • Mix the topping by combining the sugar, flour, cinnamon, and salt in a bowl and stir with a fork. Cut the cold butter into pieces and add to the other ingredients. Use a fork to work the butter in until all the ingredients are a crumbly texture.
  • Sprinkle the topping evenly over the berries. Bake uncovered for 40 minutes at 350°F.
  • The blueberries should be bubbling and the topping should be a golden brown when done. Serve while warm. Serve with ice cream if desired.

  • 1 carrot, diced
  • 2 cups cooked chicken, cut into bite-size pieces
  • 1 pear ( preferably Bosc, but any will be good)
  • 4 tablespoons pecan halves or pieces

Directions
  • Wash or peel pear, cut in quarters lengthwise. Scoop out the seed cavity and slice each quarter into 3 or 4 pieces.
  • Wash and dry greens, toss with vinaigrette and arrange on 2 plates.
  • Mix yogurt and mayonnaise, add salt and pepper to taste.
  • Mix carrot and chicken with dressing and mound on greens. Arrange pears around the chicken and scatter pecans over pears. Serve at once or refrigerate until needed.

Directions
  • Place eggs in a medium sauce pan. Add enough water to cover eggs. Add 1 teaspoon of salt.
  • Bring to a boil, reduce heat to medium and cook for 10 minutes covered.
  • Remove from heat. Drain. Run cold water over eggs until cooled. Peel.
  • Cut peeled eggs in half lengthwise and scoop out yolks into a small bowl. Mash yolks with a fork and add mayonnaise, mustard and paprika. Stir to combine. Salt and pepper to taste.
  • Fill empty egg white halves with egg mixture and garnish as desired. Keep in refrigerator until ready to serve.

  • Preheat the oven to 400° F. Lightly grease the muffin cups or line with cupcake papers.
  • In a medium bowl, add the flour, sugar, poppy seeds, baking powder, baking soda, and salt; stir to combine.
  • In a mixing bowl, blend together the eggs, yogurt, lemon zest, and vegetable oil until well mixed.
  • Pour in the dry ingredients and beat just until mixed. Do not overmix the batter.
  • Spoon into the prepared muffin cups, distributing batter evenly between 12 cups.
  • Place in the preheated oven and bake for 20 minutes or until a toothpick poked in the middle comes out clean. Do not overbake.
  • Prepare the glaze by combining the sugar and lemon juice; stir until sugar is dissolved.
  • Poke the top of the muffins with a toothpick, several times each. Spoon a teaspoon of the glaze over each of the muffins until glaze is distributed evenly on all the muffins.
  • Allow the muffins to cool in the tins for at least 10 minutes before removing them.

  • 4 slices mozzarella cheese or provolone cheese

Directions
  • In a mixing bowl, combine the ground beef, pepperoni, pizza sauce, Italian seasoning, garlic and onions.
  • Mix well to combine all of the ingredients.
  • Divide into four equal parts and pat into burgers.
  • Salt and pepper each burger to taste.
  • Fry the burgers in a large skillet or they can easily be grilled. Cook approximately 6 minutes on each side or until they reach the desired doneness.
  • Place a slice of mozzarella or provolone cheese on each right before they are finished cooking. Allow the cheese to completely melt over the burger.
  • Spread a tablespoon of pizza sauce on each bun. Place a burger on top with lettuce and tomato.

  • CRUST:
  • 3/4 cup margarine
  • 1 cup oatmeal
  • 3/4 cup brown sugar
  • 1 cup flour
  • 1 teaspoon baking soda

  • TOPPING:
  • 40 caramels
  • 4 tablespoons milk
  • 3 tablespoons margarine
  • 1 cup M & M chocolate candies
Directions
  • Preheat oven to 350° F.
  • Melt 3/4 cup of margarine and add oatmeal, brown sugar, flour, soda, and salt. Stir ingredients together until mixed thoroughly. Reserve approximately 1/8 of the crust mix to crumble over the top of the bars just before the final baking.  Pat the rest of the crust into the bottom of an ungreased 9" x 13" baking pan.
  • Bake the crust for 10 minutes. While the crust is baking, combine the caramels, milk and maragarine in a small saucepan. Cook over medium-low heat until caramels have melted. Stir the caramel mixture often while melting.
  • When the crust is done, drizzle the caramel mixture over the crust. Then sprinkle the M & M's evenly over the caramel topping. Crumble the remaining crust over the top.
  • Bake again for 15 minutes. Allow to cool and cut to desired size.
  • Tip: Use holiday colored M & M's to produce bars with a more seasonal appearance.

  • 1 bunch broccoli, about 1 1/2 lbs

  • 1 tablespoon lemon juice or vinegar

  • Peel the broccoli stalks and slice into thin coins. Divide the florets into pieces. If the olives have pits, remove them and chop olives coarsely. Press the garlic or mince very finely.
  • Put olive oil,  garlic, lemon juice and olives into the bowl to be used for serving. Add a pinch of salt and several grindings of pepper  and whisk together
  • Bring 2 cups water to a boil in a medium saucepan. Add 1/2 teaspoon salt and the sliced stalks. Cook for 2 minutes then add the florets. Cook 3 to 4 minutes more, until bright green and just tender - don't overcook. Drain well and add to serving bowl ; toss gently to coat broccoli with vinaigrette.

2. Beat eggs, milk and Seasoning in medium bowl. Pour into skillet. Cook on medium-low heat without stirring 5 minutes or until eggs are set on bottom. Arrange sliced tomatoes on top of egg mixture. Sprinkle with cheese.

3. Broil 4 to 5 minutes or until eggs are set and cheese is lightly browned.Test Kitchen Tip: Wrap the skillet handle in foil if your skillet is not ovenproof.

  • 2 cups biscuit mix
  • 1/2 cup shredded cheddar cheese
  • 2/3 cup milk

Directions
Preheat oven to 450°.

Stir together the biscuit mix, cheddar cheese and milk until a soft dough forms. Beat with a wooden spoon for about 30 seconds.

Spoon onto a greased cookie sheet and smooth down tops to prevent hard points from forming. Bake 8-10 minutes, until tops are brown.

While biscuits are baking, melt the butter in a pan and stir in garlic powder.

Once the biscuits are done brush the tops with the butter mixture.

  • 1 bottle multicolored candy sprinkles
  • crunchy peanut butter cookies
Directions
Let ice cream stand at room temperature for a few minutes to soften slightly. Pour candy sprinkles onto a plate. Scoop ice cream onto 4 cookies.

Top each with another cookie, squeeze them together gently, and scrape the ice cream edge smooth with a small spatula. Roll edges in candy sprinkles.

Eat ice cream sandwiches immediately, or freeze airtight at least 30 minutes or up to a day.

    This quick cooking method has a tendency to dry out the meat; however, the honey helps to add a richer flavor.

    Serving Suggestion:

  • On stovetop, add 1 tablespoon of oil to a 10 inch non-stick skillet to be warmed on medium heat setting.
  • Add frozen potato mixture to a non-stick skillet, using a spatula to level the potatoes evenly across the pan. Since the potato mixture does not firm up after cooking only one side, the non-stick skillet will assist with the ease of turning the pizza over when the first side is finished cooking. Cover pan and cook for 6 to 8 minutes or until golden brown on bottom surface of potatoes. Remove cover and cook an additional 5 to 6 minutes.
  • Lightly coat flat baking sheet with oil or cooking spray.
  • Remove skillet from stovetop. Using protective mitts or hotpads, place a flat baking sheet over the skillet. Hold baking sheet against skillet and turn skillet over so pizza drops out of skillet onto baking sheet.
  • Remove bits of potato from skillet and place it back onto burner, adding remaining 1 tablespoon of oil.
  • Slide potato pizza off baking sheet and into skillet, allowing uncooked surface to begin cooking.
  • Sprinkle sauteed vegetables over top of potato pizza and cover with cheese.
  • Cook second side in covered skillet for 5 minutes, until golden brown and then cook uncovered for 3 to 4 minutes. When finished cooking, tilt skillet and allow potato pizza to slide out of skillet onto serving plate. Cut into 4 pie-shaped pieces and serve warm.
  • Note: Meat can be added to this recipe. Simply use ground meat such as sausage or pieces of pepperoni. Add 2/3 cup of meat to mixture when adding other ingredients. Retain 3 tablespoons for use to be sprinkled over surface when the remaining cheese is added.

  • 4 lamb chops
  • 2 tablespoons olive oil
  • 2 teaspoons lemon juice

Directions
  • Season chops with salt and pepper.
  • In small bowl, mix together olive oil, rosemary and lemon juice.
  • Brush tops of chops.
  • Place oil side down on grill, brush tops with olive oil mixture.
  • Grill for 3-4 minute on each side.
  • Serve with aioli sauce.
For Sauce:

  • Wash potatoes if using fresh. Cook until tender but firm. If using canned, drain.
  • Peel cooked potatoes and cut into bite sized chunks.
  • In a large bowl, toss potatoes, pineapple, nuts and orange juice. Canned sweet potatoes are soft so toss them gently so they don't break apart.
  • In a small bowl, combine the mayo, milk, vinegar, curry powder, orange peel and tarragon.
  • Pour the over the potato mixture. You may not need to use all of it.
  • Toss gently and chill for several hours.
  • Serve chilled.

Directions
Preheat oven to 400 degrees.

In a large shallow baking dish combine butter, lemon, sugar and vanilla. Add peaches, turning to coat with butter mixture. Arrange peaches in a single layer cut side down.

Roast until peaches are tender and liquid is syrupy, 15-20 minutes, brushing with cooking liquid half way through.

Serve peaches warm or at room temperature with ice cream and raspberries, if desired.
