Grilled Center Cut Loin Fillet Recipe

Grilled Center Cut Loin Fillet Recipe

Ingredients
  • 6 pounds whole pork loin, boneless
  • 8 cloves garlic, peeled and sliced in half
  • 1 tablespoon Creole seasoning, to taste
  • 12 ounces beer
Directions
  • Place the pork loin in a roasting pan and pour approximately 12 oz. (1 can or bottle) of beer over the loin.
  • Rub the Creole seasoning over the loin.
  • With the sharp tip of a knife, make small slits into the meat. Place a slice of garlic into each slit.
  • Cover the pan and marinate a minimum of 3 hours; marinate longer if desired.
  • The loin may then be grilled or roasted.
  • GRILL: Over medium to medium-high heat, turn the loin every 2 minutes to brown all sides of the loin for the first 15 minutes of the cooking time; then grill the loin over indirect heat for 1 1/2 - 2 hours or until the internal temperature reaches 155 -160 degrees F for medium doneness or 165 - 170 degrees F for medium-well doneness.
  • OVEN: roast the loin uncovered at 325 degrees F, 20 to 24 minutes per pound. (The internal temperature should read 155 -160 degrees F for medium; 165 - 170 degres F for medium well.) After removing the meat from the oven, the temperature will rise approximately 5 degrees F.

  • 3 cloves garlic, minced
  • 1/4 cup low fat sodium chicken broth
Directions
Preheat oven to 375°.

In mixing bowl, combine russet potato, red potato, sweet potato, olive oil, vinegar, thyme, garlic and chicken broth, toss well to coat. Place into casserole dish and roast uncovered for 40-45 minutes or until potatoes are tender.

  • 1 can crushed pineapple with juice (20 oz. can)
  • 1 package frozen strawberries (10 ounce pkg)
  • 2 bananas, diced
  • 8 ounces sour cream
Directions
Dissolve jello in hot water; let set until just begins to jell.

Add bananas, pineapple and strawberries. Pour 1/2 of the ingredients in 8x12 inch dish. Refrigerate to let jell.

Spread sour cream over all. Pour remainder of jello over sour cream. Refrigerate until ready to serve.

  • 3 large eggs
  • 1 cup brown sugar, firmly packed
  • 1 cup light karo syrup
  • 1/3 cup butter, melted
  • 2 teaspoons vanilla extract
  • 2 cups shelled pecans (slightly broken)
  • 1 pinch salt
  • Optional: whipped cream topping
Directions
  • Preheat oven to 375° F. Then, pre-bake crust 7-9 minutes. While crust is baking, make filling.
  • Filling: in a medium bowl, beat eggs, sugar, syrup, and salt. Add butter and vanilla and stir until combined well.
  • Remove pre-baked crust from oven, pour pecans into crust and immediately pour egg mixture over pecans.
  • Place pie pan on a baking sheet and cover edges with tinfoil to prevent over-browning. Place in middle of oven and bake 35-45 minutes or until slightly set.
  • Remove from oven and cool on rack a minimum of 1 hour before cutting. Serve at room temperature or slightly warmed. Garnish with whipped cream if desired.

  • 1/4 cup herb marinated feta cheese
  • Italian dressing
  • 1/4 cup Italian garden mix - chopped
Directions
  • Cut the top 1/3 of the bread off.
  • Hollow out the bottom part of the loaf, leaving approximately 1/4 inch intact on the bottom.
  • Spread dressing over the bottom inside of the loaf.
  • Layer 4 slices of cheese, then 4 slices of ham, covering the entire inside surface.
  • On top of ham add 4 more sliced of cheese, then layer salami.
  • On top of salami, layer sweet red peppers and Italian garden mix, then olives and feta cheese.
  • Spread dressing on top of the inside of the bread top.
  • Lay top back on the loaf.
  • Wrap tightly with plastic wrap and chill for 1 hour.

  • 1 pint large strawberries, hulled, cut in half
  • 1 can pineapple chunks, drained (28 oz. can)
  • 3 tablespoons melted butter
  • 2 teaspoons honey
  • 1 pint homemade vanilla ice cream (use store-bought if you wish)
  • chocolate syrup
  • caramel syrup
  • peanuts for garnish (optional)

Directions
  • Preheat grill to medium.
  • Soak the bamboo skewers (if using) for 30 minutes in water.
  • Skewer the fruit using 2 of each type per skewer, alternating between the different types of fruit.
  • Combine the melted butter and honey. Brush the mixture onto the fruit; then place the skewers on the grill.
  • After 2 minutes turn and brush the fruit again. Don't cook the fruit much more than 4 minutes, as the fruit will become too soft and fall off the skewer.
  • Place 2 to 3 scoops of vanilla ice cream (homemade optional) in a serving bowl. Remove the fruit from 2 skewers, and place the fruit around the ice cream.
  • Top with chocolate and caramel syrup. Sprinkle with nuts if desired, and top off with a maraschino cherry.

  • 1 1/2 pounds Yukon Gold or red skinned potatoes
  • 3 tablespoons butter or margarine, divided
  • 1 dry yellow onion, chopped fine
  • Kosher salt and freshly ground pepper to taste
Directions
  • Use left over boiled Yukon Gold or red skinned potatoes* cut into 1 inch square pieces. In a heavy skillet, melt 1 tablespoon or butter and sauté onions for approximately 5 minutes, or until the onions are lightly browned. Add 2 tablespoons of butter and diced potatoes, and stir to mix onions and potatoes.
  • Cook over medium heat until golden brown, approximately 6 to 7 minutes. Flip and cook an additional 6 to 7 minutes until golden brown.
  • Salt and pepper to taste.

    *To Boil Potatoes: Scrub potatoes, cutting out any darkened spots. Cut potatoes into quarters. Place potatoes in a large sauce pan filled with enough cold water to completely cover potatoes. Add 1 teaspoon salt, bring to a boil and cook 20 minutes or until tender. Drain.

Ingredients
  • 1/4 cup butter
  • 16 ounces sour cream
  • 1/3 cup granulated sugar
  • 1 teaspoon salt
  • 2 packets active dry yeast
  • 1 tablespoon granulated sugar
  • 1/2 cup warm water
  • 2 large eggs
  • 6 cups flour
  • 1/2 cup grandulated sugar
  • 2 teaspoons ground cinnamon
  • 1/4 cup butter, softened
Directions
  • Heat butter, sour cream, sugar, and salt in saucepan over low heat until butter melts. Stir often.
  • Dissolve both packets of yeast in 1/2 cup warm water with a tablespoon of sugar mixed in. Let stand 5 minutes, or until the yeast starts to bubble. Add the butter mixture, eggs, and 2 cups of flour and beat with a mixer for two minutes, or until mixture becomes smooth. Gradually add enough of the remaining flour to form a soft dough.
  • Place dough on a lightly floured surface and knead until smooth--approximately 10 minutes. Place dough in a greased bowl and turn the dough so that all sides are greased. Cover and let rise in a warm place for approximately one hour, or until doubled in size.
  • Mix 1/2 cup of sugar and cinnamon and set aside for later.
  • After the dough has risen, punch it down and divide it in half. Place one portion on a slightly floured surface and roll it with a rolling pin into a rectangle approximately 10"x 22".
  • Spread half the butter over the surface of the dough with a spatula and then sprinkle half of the cinnamon and sugar mixture over it, as well.
  • If you are adding a coin, bean, or figurine as a token in the King Cake, place it on the rolled out dough just before rolling it up so the token is contained in the rolled up dough.
  • Start on the long side of the dough and roll it like a jelly roll. Place the roll, seam side down, on a greased baking sheet and bring the ends together to form an oval ring. Pinch ends together to seal. Repeat steps with remaining dough.
  • Cover and let rise for 20 minutes or until they double in size again.
  • Bake at 375º F. for 15-20 minutes or until golden brown.
  • When cake is cool, decorate with powdered sugar frosting and sprinkle with bands of colored sugars in purple, yellow and green.

Herbed Cod in White Wine Recipe

  • 1 pound cod fillets (or other firm white fish)
  • 1 tablespoon butter
  • 1 small onion
  • 4 tablespoons chopped fresh herbs, such as parsley, dill, oregano, chives, basil, etc.
  • 2 teaspoons butter
  • 1 lemon (optional)
  • 1/2 cup dry white wine
  • salt and pepper
Directions
  • If using the lemon, remove a small amount of zest from a lemon and chop it very finely. Make a paste of finely chopped herbs, butter, and the lemon zest, if using. Chop the onion very finely and set aside.
  • Remove skin, if any, from the fillets. Cut into 4 serving size pieces. Make 3 or 4 cuts into each of the fillets, about 3/4 of the way through, and fill each cut with some of the herb mixture.
  • In a small skillet, just large enough to hold the fillets in a single layer, melt one tablespoon of butter over medium heat and add the chopped onion. Cook about 5 minutes, until the onions soften.
  • Add wine to the onions in the pan. Put the fillets on top of the onions, adjust the heat to maintain a simmer, cover, and cook until the fish flakes easily with a fork ( about 10 minutes for 1 inch thick fillets, less if  thinner).
  • Serve hot, spooning some of the pan sauce over each fillet, if you wish. Season with salt and pepper to taste.
  • TIP: To have lemon available for zesting, freeze  rinds whenever using lemons for juice. Well wrapped, they will keep for months and are easier to grate when frozen.

Directions
  • Rinse 1-1/2 cups long-grain white rice in cold water; then soak the rice in cold water for 30 minutes and drain well.
  • In a large saucepan or covered skillet, heat 2 to 3 tablespoons olive oil over medium-high heat. Add 1/4 cup finely chopped white or yellow onions to the pan and saute quickly (1 to 2 minutes).
  • To the onions, add 2 cloves of minced garlic and cook for an additional 30 seconds.
  • Add the 1-1/2 cups of soaked and drained long-grain white rice and stir-fry for about 3 minutes.
  • Pour in 2-1/2 cups water or vegetable stock and bring to a boil.
  • Reduce the heat to low, cover the pan, and simmer for 15 to 18 minutes or until the rice has absorbed the liquid. Do not stir the rice during the cooking time. Leave the pan covered and do not check the rice until the suggested cooking time has elapsed.
  • Serve the rice immediately. Use the rice pilaf as a side dish; as a bed for grilled chicken, turkey, or fish; or as an accompaniment for stir-fried beef or pork dishes.

  • 2 teaspoons sugar
  • 2 teaspoons milk

Directions
  • Place peas, shredded cheese, celery and onions in a bowl.
  • In a separate bowl, combine dressing ingredients. Pour dressing over pea and cheese mixture and blend well. If desired, fold in bacon bits.
  • Cover and refrigerate before serving. Doubles easily.
*Note:Frozen peas can be used; place the peas in a strainer in the sink. Pour boiling water over the peas to thaw; and then allow peas to cool before preparing the salad.

  • 1 pound skinned boneless chicken breasts, cut into strips

  • 1 teaspoon paprika
  • vegetable oil
Directions
In a large bowl combine buttermilk, boullion and oregano; let stand 10 minutes.

Stir in chicken. Let stand 30 minutes to blend flavors.

In a plastic bag, combine flour and paprika. Add chicken a few pieces at a time: shake to coat. Dip in buttermilk mixture again and then coat with flour again.

In a skillet, fry chicken strips in hot oil until golden on both sides. Drain on paper towels.

3. Pour oil into deep fryer or large heavy skillet, filling no more than 1/3 full. Heat to 375°F on medium heat. Fry fish, a few pieces at a time, 3 to 4 minutes or until golden brown, turning once to brown evenly. Drain on paper towels. Sprinkle fish with Old Bay.

Directions
  • In a small bowl, combine first seven ingredients; mix well to blend.
  • Poke steaks with a fork to allow marinade to soak into steaks. Place steaks in a reseable bag. Pour marinade into bag.
  • Seal and place in the refrigerator for at least 1 hour.

  • 4 sweet potatoes
  • 1 cup mini marshmallows
  • Honey Caramel Sauce:
  • 4 tablespoons butter
  • 1/4 cup light brown sugar
  • 1/4 cup honey
  • 1/2 teaspoon cinnamon
Directions
  • Preheat oven to 450 degrees F.
  • Bake sweet potato in oven for 45 minutes, until tender.
  • Remove poke with a fork to let steam out, being very careful as steam will be very hot.
  • For Honey Caramel Sauce, melt butter over medium heat in a small saucepan; add brown sugar, stirring to combine. Add honey and cinnamon; continue stirring for approximately 4 to 5 minutes. Do not boil.
  • Cut a 2-inch cross in the center of each potato. Push open the potato until filling starts to push through the cut.
  • Place half of the marshmallows into the sweet potato. Drizzel caramel sauce over the marshmallows. Place the remaining marshmallows over the caramel sauce.
  • Place potatoes on a baking sheet and broil for 1-2 minutes or until marshmallows start to brown.

  • graham crackers - whole
  • 3 tablespoons sugar
  • 5 tablespoons butter - melted
  • 8 ounces cream cheese - softened
  • 1 cup peanut butter - creamy
  • 8 ounces whipped topping
  • 12 ounces sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon juice
  • cocoa powder or a milk chocolate bars, shavings
Directions
  • Preheat oven to 350° F.
  • Crush graham crackers with a rolling pin or in a food processor. Combine sugar with the cracker crumbs; add butter and mix thoroughly.
  • Press mixture firmly into pie pan and along the sides of the pie pan.
  • Bake for 10 minutes. Let crust cool while making the pie filling.
  • Mix cream cheese, peanut butter, whipped topping, condensed milk, vanilla extract and lemon juice in mixing bowl until smooth and creamy.
  • Pour into COOLED graham cracker pie crust.
  • Refrigerate for 5-6 hours.
  • Sprinkle with cocoa or chocolate shavings. Cut and serve.
