Ingredients
  • 1/4 cup shredded onion
  • 1 tablespoon ground cinnamon
  • 1 tablespoon soy sauce
  • 1 tablespoon Sugar
  • 1/2 tablespoon salt
  • 1/4 teaspoon pepper
  • 4 pounds pork roast or loin
Directions
  • Mix onion, cinnamon, soy sauce, sugar, salt, and pepper in small bowl to create a rub.
  • Trim fat from meat and score the top of the roast in a diamond pattern making cuts about 1/4 inch deep.
  • In a covered grill, arrange heat for indirect grilling. Heat should be medium-low.
  • Place meat on rack in a roasting pan on the grill. Close the cover and grill for 1 to 1 1/2 hours or until the meat thermometer registers 155° F.
  • Remove meat from grill and cover with foil; let stand 15 minutes before carving.

  • 2 pounds sliced bacon, cooked and crumbled
  • 4 cups sour cream
  • 3 cups shredded Mozzarella Cheese
  • 3 cups shredded cheddar cheese
Directions
  • Preheat oven to 350 degrees F.; grease the bottom and sides of the baking dish.
  • Cut baked potatoes into 1" cubes. Spread half of the cubed potatoes in the bottom of the prepared baking dish.
  • Sprinkle the potatoes with half of the salt, pepper and bacon. Add half of the sour cream on top and carefully spread out evenly. Sprinkle half of the cheeses over the sour cream.
  • Repeat all of the layers.
  • Place in the preheated oven and bake, uncovered, for 30 to 45 minutes or until the cheese is melted and nicely browned.

  • Preheat the oven to 375 degrees F.
  • Place the pie crust into the pie plate. Trim and flute the edges; set aside.
  • Dice the rhubarb and place in a large bowl. Add the sliced strawberries.
  • Add the sugar, flour, and lemon juice; stir all together until evely mixed.
  • Carefully pour rhubarb mixture into the pie crust.
STREUSEL TOPPING:
  • Mix together the flour, brown sugar, and cinnamon in a medium bowl.
  • Cut the butter into the dry ingredients until crumbly.
  • Sprinkle the topping over the rhubarb.
  • Place in the preheated oven and bake for 50 minutes or until filling is bubbly and the crust and topping are browned.

  • 15 corn tortillas (small)

Directions
  • Preheat the oven to 350° F. Grease the bottom and sides of a 9 x 13 baking dish.
  • Mix all ingredients except cheese and tortillas in a large bowl.
  • Place a layer of tortillas on the bottom of the prepared baking dish.
  • Then cover the tortillas with about 1/3 of the chicken and soup mixture. Sprinkle 1/3 of the cheese over the chicken and soup layer.
  • Repeat with two more layers of each, ending with cheese on top.
  • Bake 1 hour in preheated oven or until bubbly.
  • Serve with lettuce, sour cream, salsa, or any other of your favorite Mexican fixings.
Note: A rotisserie chicken works perfect for this recipe and saves a lot of time in preparing this dish.

  • 2/3 cup salsa
  • 4 tablespoons sour cream

Directions
  • Tear Romaine into bite size pieces and place in a large bowl.
  • Add the corn, black beans, tomatoes, celery, and carrots to the lettuce; toss to mix ingredients together.
  • Combine the salsa, sour cream, and ranch dressing; stir together until well mixed.
  • Just before serving, pour enough dressing over the salad to coat the lettuce to your taste. Use only as much as is required to coat the dressing the way you like it. You may not need to use all of it.
  • Serve immediately.

  • 2 eggs
  • 2 tablespoons butter, melted
Directions
Preheat the oven to 425 degrees. Add oil to cast iron skillet and place in oven while preheating.

In a large mixing bowl, blend corn meal, flour, baking powered and sugar.

In another bowl, whisk together milk, eggs and melted butter. Add this mixture to corn meal mixture and blend together thoroughly.

Next using oven mitts, carefully remove the skillet from the oven. Pour batter into the skillet and return to oven. Bake for about 15-20 minutes or until a wooden toothpick inserted in the center comes out clean.

Serve with soft butter and honey or maple syrup.

Directions
  • Cook the ditalini macaroni as directed on the package. Drain and rinse with cold water; allow to drain completely.
  • Chop the celery, cucumber, green pepper and water chestnuts and combine in a large mixing bowl. Add the minced dried onion.
  • Add the package of coleslaw mix and the drained ditalini. Toss all the ingredients together and set aside.
  • Combine all the dressing ingredients together in a small bowl and whisk until smooth. Pour dressing over the other ingredients and toss until evenly coated.
  • Pour salad into a serving bowl, cover and chill in the refrigerator for at least an hour before serving.

Directions
Heat oven to 400°.

If using meat, brown the ground beef in a skillet over medium-high heat until no longer pink; drain.

Mix spaghetti sauce, tomatoes, water and browned meat, if using.

Spoon 1 cup of sauce mixture onto bottom of 9x13 baking dish. Layer 1/3 ravioli and 1/3 cheese over sauce mixture. Repeat layers twice. Top with remaining sauce mixture.

Cover and bake 30 minutes.

Uncover and bake 15 minutes more or until ravioli is tender and heated through.

Let stand 10 minutes.

  • Tear the lettuce into bite size pieces and place in a bowl. Add the onion slices and Parmesan cheese (reserve a little cheese to sprinkle on top); toss to mix in with lettuce.
  • Blend the dressing ingredients together; pour over combined lettuce and onion. Top with croutons and reserved Parmesan cheese.

  • Divide the jar of peanuts into thirds and evenly spread 1/3 on the bottom of the baking pan.
  • Stir 1/3 into the mixture above.
  • Spread mixture on top of the peanuts in the bottom of the baking pan. Carefully press the mixture evenly into the pan.
  • Sprinkle the remaining peanuts on top. After they are evenly distributed, press them slightly into the bar mixture so they stick to the bars.
  • Place in the refrigerator to store. To serve, cut into bars that are approximately 1" x 2 1/2" in size.

Add soy sauce-water mix and cook (covered, if the asparagus is quite thick; uncovered, if  thin), until asparagus is crunchy-tender. Test for doneness every minute. (Taste a piece, or test with a sharp knife, to determine doneness.) The liquid should have mostly cooked away, leaving a slight glaze on the asparagus. Serve immediately.

  • 2 cans green beans, French-style cut
  • 1 can cream of mushroom soup
  • 1 can French fried onions, small can
Directions
  • Put the cream of mushroom soup in a casserole dish.
  • Add the green beans and stir until evenly mixed with the soup.
  • Place the casserole in the oven and bake at 350 degrees F for 50 minutes.
  • Remove from the oven and add the French fried onions on top. Return to the oven and bake an additional 5 to 6 minutes or until you see the onions have browned. Watch so they do not burn.
  • Enjoy!
Note: If serving for a larger group, this recipe can easily be doubled. Be sure to use a larger casserole dish.

Creamy Fruit Salad Recipe

Ingredients
  • 1 cup mandarin oranges
  • 2 cups pineapple chunks, fresh or canned
  • 2 cups quartered strawberries
  • 1 cup blueberries
  • 2 cups grapes, cut inch half
  • 1 apple, diced
  • 1 can sweetened condensed milk
  • 1 package cream cheese (8 ounce pkg)
Directions
  • Drain canned fruit and then mix all fruits together.
  • Combine the sweetened condensed milk and cream cheese in a mixing bowl and beat until smooth.
  • Pour the cream cheese mixture over the fruit: stir until all fruit is evenly coated.
  • It is best to allow it to set in the refrigerator overnight. If not overnight, at least until thoroughly chilled.

Twice Baked Potatoes with Cheese Recipe

  • 6 potatoes, baked
  • 1/2 cup sour cream
  • 1/4 teaspoon garlic salt
  • 1/8 teaspoon black pepper
  • salt, to taste
  • 2 tablespoons milk (optional)
  • 3/4 cup shredded cheddar cheese, divided
  • 1 tablespoon fresh chives, finely chopped (optional)
Directions
Bake potatoes as directed; let stand about 10 minutes.

Cut a lengthwise slice off the top of each baked potato; discard skin from slices and place pulp in a bowl. Scoop pulp out of potatoes; add pulp to the bowl.

Mash the potato pulp with a potato masher or an electric mixer on low speed. Add sour cream, garlic salt and pepper; beat until smooth. If necessary, stir in milk to reach desired consistency. Season to taste with salt and additional pepper. Stir in 1/2 cup of the cheddar cheese and chives, if desired. Divide the mashed potato mixture evenly among the potato shells. Place in a 2-quart baking dish.

Bake, uncovered, in a 425 F oven for 20-25 minutes or until light brown. Sprinkle with remaining cheese. Bake for 2-3 minutes more or until cheese melts.

  • CRUST:
  • 1 3/4 cups pretzels, crushed
  • 3/4 cup butter, melted
  • 2 tablespoons sugar
  • CREAM CHEESE LAYER:
  • 8 ounces cream cheese, softened
  • 1 cup sugar
  • 8 ounces whipped topping, thawed
  • JELLO LAYER:
  • 2 cups water
  • 1 package raspberry Jello (6 ounce pkg)
  • 2 packages frozen raspberries (10 oz pkgs)
Directions
Mix together pretzels, melted butter and sugar. Press evenly in pan and bake at 350° for 10 minutes; let cool.

Mix cream cheese and sugar. Fold in whipped topping, and stir until sugar is dissolved.

Spread cream cheese mixture over cooled pretzel crust.

Boil water and mix with jello. Do not add cold water. Add frozen raspberries to jello. Let cool a bit and pour over cream cheese layer.

Refrigerate for at least 4 hours.
