  • 4 Filet Mignon, 1 1/4 inch thick

Directions
Remove filets from refrigerator 20 minutes before cooking.

Season with salt and pepper.

To BROIL, place filets on rack in broiling pan. Set oven at broil; preheat several minutes. Place broiling pan in highest position in broiler; allow 2-3 minutes on each side to sear filets. Lower pan to middle position; broil 2 minutes on each side for rare, 3 minutes 30 seconds for medium, and 4 minutes for well-done.

To GRILL, place grill rack about 4 inches above red-hot coals. Place filets on grill; sear about 2-3 minutes on each side. Cook 2 minutes 30 seconds for medium rare, 3 minutes for medium, and 3 minutes 30 seconds for well-done.

  • Heat oven to 425 degrees F.
  • Peel the potatoes and cut into 1/4 to 3/8 inch slices, being careful not to cut completely through the bottom of the potato.
  • Place potatoes in a 13 x 9 x 2 baking pan. Brush each potato with butter and sprinkle with salt.
  • Bake 40 to 45 minutes or until tender and golden brown, basting occasionally with butter.

  • 1 head or large bag of lettuce
  • 2/3 head cauliflower, chopped fine
  • 1 pound bacon, fried and crumbled
  • 6 tablespoons Parmesan cheese
  • Dressing
  • 1/2 cup Mayonnaise and Miracle Whip (1/2 cup EACH)
  • 1/4 cup sugar
Directions
  • Toss lettuce, cauliflower, and bacon together.
  • Just before serving, mix with dressing. In several intervals, add a small portion of the dressing with the salad. Determine if more dressing is needed. Do not add too much dressing at once. Stir in dressing to your taste. Too much dressing can cause salad to be soggy.
Note: If you will not eat the entire salad at your meal, only mix up what you think you will need. Store the remaining lettuce mixture and dressing separately in the refrigerator. Mix together just before you are ready to serve again.

  • 3 egg yolks - beaten
  • 2 tablespoons butter
  • 1 1/4 teaspoons vanilla
  • 1 pie crust - 9 inch and baked
  • 3 bananas - sliced
Directions
  • In a saucepan, combine the sugar, flour and salt. Gradually add in the milk while stirring.
  • Cook over medium heat while stirring constantly until it is thick and bubbly.
  • Cook and stir for two minutes and then remove from the heat.
  • Mix a small amount of the warm mixture in with the egg yolks to temper them. Then add the yolks into the saucepan with the rest of the mixture.
  • Return to the heat and cook for an additional two minutes while stirring.
  • Remove from the heat and add in the vanilla and butter. Stir to combine.
  • Slice bananas and place into a cooled baked pastry shell. Top with the pudding mixutre and bake in a 350° F oven for 12 minutes. Allow to cool slightly and the refrigerate for 3 hours before serving.

  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 pound boneless, skinless chicken breasts, cut into 1 inch pieces
  • 1 clove garlic, minced
  • 3 teaspoons olive oil, divided
  • 1 package frozen stir fry veggies (16 ounce pkg)
  • 2 teaspoons cornstarch
  • 1 tablespoon cold water
  • rice, cooked
Directions
In a small bowl combine honey, soy sauce, salt and pepper.

In a large skillet, fry chicken, garlic and sauce in 2 teaspoons oil. Cook and stir until chicken is lightly browned and juices run clear; remove and keep warm.

In the same pan, stir fry vegetables in remaining oil for 4-5 minutes, or until heated through.

Add chicken and mix well.

Combine corn starch and cold water until smooth; stir into chicken mixture. Bring to a boil, cook and stir for 1 minute, or until thickened.

Serve over rice.

Directions
Melt butter in pan or dutch oven.

Break vermicelli in small pieces and add to pan and cook until golden brown, stirring constantly.

Add rice and stir until rice is well coated with butter.

Boil broth and add boiling broth to rice mixture. Season to taste. Cook, covered, over low heat until liquid is absorbed, about 25 minutes.

Stir lightly with fork. Let stand in warm place about 10 minutes before serving.

  • 1 tablespoon sesame oil or olive oil
  • 2 cloves garlic - minced
  • 1 tablespoon ginger - grated
  • 2 chicken breasts - cooked and diced
  • 1 cup carrot - shredded
  • 1 cup cabbage - shredded
  • 2 tablespoons teriyaki sauce
  • 3 green onions - chopped
  • 1/4 cup golden raisins - optional
  • 14 egg roll wrappers - or spring roll wrappers
Directions
  • Soak cellophane noodles in hot water for 10 minutes, drain.
  • Heat oil in a large skillet over medium heat.
  • Add garlic and ginger and cook for 1 minute.
  • Add chicken, carrots, cabbage and teriyake sauce and cook for 5 minutes.
  • Add the noodles and green onions, stir to combine.
  • Take the egg roll wrapers one at a time and top with the chicken mixture down the center.
  • Lay the wrapper with a point towards you, fill from point to point going across the wrapper. Roll up the bottom point over the top of the filling. Fold in the sides and continue to wrap up to the other point.
  • You can either steam them in the top of a steamer basket or fry them in 1 cup of canola oil until nicely browned, flip and brown the other side for approximatley 3-5 minutes each side. If you are going to steam them, lay lettuce leaves out to cover the bottom on the steamer so the rolls won't stick.

  • 12 ounces rotini pasta
  • 1/2 cup milk
  • 3 tomatoes - cut into chunks
  • 1 tablespoon fresh thyme - chopped

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 3 tablespoons chives - finely diced
  • salt and pepper
  • 5 cups romaine lettuce - chopped
Directions
  • Preheat oven to 400 degrees F.
  • Lay bacon on lined baking sheet. Bake for 12-15 minutes until crisp. Drain on paper towels.
  • Cook the pasta according to package directions; drain and toss with the milk in a large bowl; set aside.
  • In a large skillet, add tomatoes, thyme and garlic with bacon drippings; toss until warmed through; season with salt and pepper. Crumble the bacon into bite-size pieces. Toss the bacon and tomato mixture with the pasta.
  • In a small bowl, mix the mayonnaise, sour cream. Pour over pasta and stir until combined. Season with salt and pepper. Add the lettuce; toss again to coat. Serve.

FROSTING:
  • Combine the margarine, milk, and sugar in a small saucepan. Bring to a boil; allow to boil for 30 seconds.

Directions
  • Preheat oven to 400°.
  • In a mixing bowl, stir the dry ingredients and then cut in the butter to resemble the consistency of cornmeal.
  • Blend in the cheeses with a fork until well blended.
  • Shape into 1 1/2 to 2 inch rolls.
  • Chill for 30-40 minutes in the refrigerator and then slice each roll into slices approximately 1/4 inch thick.
  • Bake on an ungreased cookie sheet for approximately 10 minutes.
  • Remove from cookie sheet and let cool.
  • Store the cooled crackers in an airtight container.
  • Freezes well.
  • *These crackers can be made crispier by slicing them thinner before baking.

  • Place a skillet over medium-high heat and allow to heat up.
  • Add the sandwich to the skillet, buttered side down. While the sandwich is being browned on the first side, generously butter the unbuttered side while it is in the skillet.
  • When the first side is nicely browned flip the sandwich over and brown the other buttered side.
  • Once both sides are browned, remove from the skillet, cut in half and serve.
  • Continue to make as many sandwiches as needed to serve your family. You can cook more than one sandwich at a time if the skillet is large enough.

  • 1 box lasagna noodles
  • 1 package cottage cheese (large pkg)
  • 1 pound Ground Beef
  • 26 ounces spaghetti sauce
  • 1 cup water
  • 2 cups shredded parmesan
  • 2 cups shredded mozzarella
Directions
Cook lasagna noodles as directed on box (cook a total of 12 noodles).

Brown the ground beef; drain.

Stir the spaghetti sauce and water into the ground beef.

Put a little bit of the sauce mixture into the bottom of a 9x13 pan. Then layer noodles, cottage cheese, spaghetti sauce mixture, Parmesan cheese and mozzarella cheese.

Repeat the layers two times.

Bake at 350 for 1 hour or until browned and bubbly.

  • 3 heads Romaine lettuce
  • 1/2 cup Caesar dressing (favorite bottled brand)
  • 1/2 cup shredded Parmesan cheese (divided)
  • 2 cups Caesar-flavored croutons
Directions
  • In a large bowl, break romaine lettuce into small pieces. Sprinkle with 1/2 cup shredded Parmesan cheese.
  • Start with about 1/4 cup of your favorite bottled Caesar salad dressing (light or regular) and pour over the lettuce. Toss until lettuce is evenly coated. Determine if there is enough dressing on the lettuce to your liking. If not, add one or two more tablespoons and toss again. Repeat if necessary.
  • Add one to two cups of Caesar-flavored croutons and toss mixture to distribute evenly.
  • Sprinkle the top with more shredded Parmesan cheese and serve. If not serving immediately, place in the refrigerator. This salad can be mixed a little in advance but I wouldn't mix it up more than two hours before serving to make sure lettuce stays fresh and crisp.

  • Place brats in a saucepan and cover with beer. Bring to a boil. Cook for 5 to 10 minutes at a low boil.
  • Remove the brats from the saucepan and discard the beer.
  • Place the brats on a preheated grill and grill just long enough to brown the brats nicely.
  • While the brats are on the grill, heat the leftover (or store bought) chili.
  • When the brats are done, serve the brats and chili. Allow everyone to add their own chili.
  • Serve with chopped onions and cheese if desired.

  • 1/4 cup chili sauce
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream (light or regular)
  • 1/4 cup apple cider vinegar
  • 1 teaspoon celery seed
  • 2/3 cup brown sugar
Directions
  • Toss coleslaw, carrots, jalapeño, onion and salt in colander.
  • Place over sink and let stand for 1-2 hours, toss occasionally. This is to allow the cabbage to wilt and drain. (If in a hurry, allow it to sit for at least 15 minutes, toss and run under cold water.)
  • Rinse cabbage mixture under cold water, drain and let dry on paper towels. Transfer to large mixing bowl or place in a plastic bag and refrigerate for up to 24 hours until ready to use.
  • Bring mustard, chili sauce, mayo, sour cream, vinegar, celery seed, and brown sugar just to a boil in saucepan over medium heat, approximately 3-5 minutes.
  • Remove from heat and allow to cool to room temperature.
  • Pour over prepared cabbage and toss to coat.
  • Cover with plastic wrap and refrigerate 1 hour or up to one day.
  • Serve chilled.

Ingredients
  • 5 pounds russet potatoes
  • 8 ounces cream cheese
  • 12 ounces sour cream
  • 1 teaspoon salt
  • Pepper to taste
  • Butter
  • Shredded Colby Jack Cheese or cheese of choice
Directions
  • Preheat oven to 350 degrees F. Wash potatoes and remove blemishes.
  • Bake potatoes in preheated oven for 1 hour or until tender when poked with a fork.
  • Allow potatoes to cool enough to handle. Slice potatoes in half lengthwise. Scrape the potato out of the skins and place in a mixing bowl; set skins aside.
  • Mash potatoes and beat in the cream cheese, sour cream, salt, and pepper; beat until creamy.
  • Fill the potato skins with the mashed potatoes and set them in a baking dish; cover with foil and refrigerate overnight.
  • Before baking to serve, dot the top of the potatoes with butter and sprinkle with the cheese.
  • Bake again at 350° for 30-60 minutes or until warm and slightly browned at edges; serve.

Ingredients
  • 1 pound fresh broccoli, rinsed and trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon kosher salt
  • 1/4 cup grated Parmesan (optional)
Directions
Preheat oven to 425°.

Cut broccoli florets into bite size pieces. Place broccoli in mixing bowl and add remaining ingredients except cheese. Mix well. Spread on a jelly roll pan or cookie sheet and bake for 8-10 minutes.

Remove from oven and toss with the cheese, if desired. Serve immediately.

  • 8 ounces spiral pasta
  • 2 1/2 cups fresh vegetables, chopped (broccoli, carrots, tomatoes, bell peppers, cauliflower, onions, etc)
  • 1/2 cup cheddar cheese, cubed
  • 1/3 cup green olives (optional)
  • 1 cup Italian Dressing
Directions
Cook pasta according to package instructions; drain, rinse and cool.

In a large bowl combine all ingredients except Italian dressing.

Add dressing and cooked pasta; toss well. Serve chilled or at room temperature.

  • 1 egg
  • 1 teaspoon baking soda
  • 1 cup buttermilk - or sour milk
  • 1 1/2 cups flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 1/2 unsweetened chocolate baking squares
Directions
  • Cream sugar and butter together.
  • Add egg, and chocolate and mix well.
  • Mix dry ingredients - flour, salt and soda together in a separate bowl.
  • Sift dry ingredients into butter/egg mixture.
  • Gradually stir in milk, and then add the vanilla.
  • Bake at 350° F for 25 minutes.
  • Frost as desired.
