Garlic Lemon-Pepper Rotisserie Chicken Recipe

This chicken is moist and delicious; it practically melts in your mouth. This recipe can also be roasted in the oven without the use of a rotisserie.
Garlic Lemon-Pepper Rotisserie Chicken Recipe

  • 1 chicken (3 1/2 - 4 pounds)
  • 2 lemons
  • 3 teaspoons salt
  • 1 teaspoon pepper divided
  • 2 tablespoons butter softened
  • 10 cloves garlic
Directions
In a small bowl, grate the zest from 1 lemon and mix it with 2 tsp. of salt and the pepper. Add the lemon zest mixture to the butter and stir with a fork until the all the ingredients are evenly mixed. Set aside.

Salt the cavity of the chicken with the remaining 1 tsp. of salt. Cut the lemons into quarters and place them in the cavity of the chicken. Peel the cloves of garlic and place 5 of them in the cavity of the chicken along with the lemons.

Place the chicken on the rotisserie spit. Tie the legs tightly together so that the ingredients inside will not drop out when the chicken is rotating on the rotisserie.

Apply the lemon and butter mixture to the chicken. Rub approximately 1/2 of the butter under the skin of the chicken, spreading it out evenly. After rubbing the butter under the skin, place the remaining 5 garlic cloves sporadically under the skin. If the outside of the chicken is moist, dry it off with a paper towel and then rub the remaining lemon butter mixture on the chicken. Now finish tying the chicken around the fatty parts of the legs and tying the wings to the body.

Cook according to manufacturers directions, around 90-120 minutes or until the internal temperature of the thickest part of the thigh reaches 175°F. Remove from rotisserie and remove the items in the cavity. Tent the chicken with foil and allow it to rest for 15 to 20 minutes before carving.

  • 4 tablespoons butter
  • 4 tablespoons olive oil
  • 2 cloves garlic, finely chopped
Directions
  • Peel potatoes and cut into bite-size pieces.
  • Preheat oven to 425 degrees F. Place cookie sheet (with sides) or 9x13 pan into oven with butter and oil on the pan. Remove as soon as the butter melts.
  • Swirl butter and oil around the pan to coat. Toss garlic in butter/oil mixture. Add potatoes and toss with garlic/butter/oil until well coated.
  • Place in preheated oven and roast, turning every few minutes as each side browns. Roast until all sides of potato are golden brown and you can pierce them easily with a fork.

Directions
Preheat oven to 350°.

In glass casserole dish, pour drained green beans into bottom. Spread cheese over green beans.

Next, mix soup and milk together. Pour soup mix in dish. Pour French Fried onions over top of mixture.

Put in oven for 25-30 minutes, or until french fried onions are golden brown. You may need to cover with foil if onions are browning too quickly.

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup walnuts - chopped fine
  • 1 teaspoon ground cinnamon
  • 1/3 cup (5 tablespoons) butter - melted
  • CREAM CHEESE FILLING:
  • 12 ounces cream cheese - softened
  • 1 cup sugar
  • 3 eggs
  • PUMPKIN FILLING:
  • 15 ounces (1 can) solid packed pumpkin
  • 3 eggs - separated
  • 3/4 cup sugar - divided
  • 1/2 cup milk
  • 2 tablespoons ground cinnamon
  • 1/2 teaspoon salt
  • 1 envelope of unflavored gelatin
  • 1/4 cup cold water
  • 8 ounces (1 tub) whipped topping
Directions
CRUST:
  • In a medium bowl, mix the crumbs, walnuts, sugar and cinnamon together.
  • Stir in melted butter until all is moistened.
  • Press into an ungreased 13x9 baking dish.

CREAM CHEESE FILLING:
  • In a large mixing bowl, beat the cream cheese until smooth.
  • Beat in a sugar and eggs until fluffy.
  • Pour over the crust and bake at 350 degrees for 20 minutes or until set.
  • Allow to cool.

PUMPKIN PIE FILLING:
  • In a large saucepan, combine the pumpkin, egg yolks, 1/2 cup of sugar, milk, cinnamon and salt.
  • Cook and stir over low heat 10-12 minutes or until mixture thickens.
  • Remove from heat.
  • In a small saucepan, sprinkle gelatin over cold water, let stand for 1 minute.
  • Over low heat, stir the gelatin until it is dissolved completely.
  • Stir in the pumpkin mixture, allow to cool.
  • Beat the egg whites, with the remaining 1/4 cup of sugar until stiff peaks form. May not get real stiff but will become thick and glossy.
  • Fold into the pumpkin mixture.
  • Pour pumpkin mixture over the cream cheese layer.
  • Top with a layer of whipped cream topping.
  • Refrigerate for at least 4 hours or until completely set.

  • 1 tablespoon flour
  • 28 ounces enchilada sauce
  • 2 cups chicken broth
  • 2 pounds ground beef
  • 1 onion - diced
  • 8 ounces green chiles - diced
  • 1 teaspoon seasoning salt
  • 12 corn tortillas
  • 1/2 cup vegetable oil
  • 3 cups Colby and Monterey Jack cheese
  • 1 cup green onion - sliced
  • 1/2 cup cilantro - chopped, more for garnish
Directions
  • In a large saucepan over medium heat, melt the butter. Add the flour and cook for 1 minute. Add enchilada sauce and chicken broth. Season with salt and pepper and bring to a boil. Reduce heat and simmer 30-40 minutes.
  • In a large skillet, brown the ground beef and onion. Drain. Stir in chilies and seasoned salt. Set aside.
  • In a small skillet, heat oil over medium heat. Fry tortillas individually in oil until soft, approximately 30 seconds per side. Drain on paper towels.
  • Preheat oven to 350 degrees. Spread 1 cup of the sauce onto te bottom of a 9x13 baking dish. Dip each tortilla into the sauce. Spoon meat, grated cheese, green onions and cilantro into the tortilla. Carefully rollup and place seam-side down in baking pan. Repeat with all tortillas. Pour remaining sauce over enchiladas and top with cheddar cheese. Bake for 20-30 minutes.
  • Serve with sour cream and cilantro.

  • 1/2 cup raw rice
  • 3 1/2 tablespoons butter, divided
  • 3 tablespoons onions
  • 2 tablespoons green pepper
  • 1/8 teaspoon sage
  • 1/4 teaspoon salt
  • 1 tablespoon flour
  • 1 1/2 cups tomatoes
Directions
Brown rice in 1 tablespoon butter.

Add 1 1/2 cups hot water. Bring to a boil. Cover and steam slowly for 10 minutes.

Put remaining butter, onions, pepper, sage and salt in another pan and brown lightly. Add flour and 1/2 cup tomatoes. Blend well, add remaining tomatoes and boil 5 minutes.

Pour over rice, let steam until sauce has desired consistency.

  • 1 pound cabbage
  • 2 carrots

  • 2 tablespoons balsamic vinegar
  • 1/2 cup sunflower seeds or almonds (optional)

  • Coarsely chop or grate about half a medium sized head of green cabbage. Coarsely chop or grate 2 carrots. Mix cabbage and carrots together.
  • In a small bowl, mix together 2 tablespoons honey, 2 tablespoons balsamic vinegar and a pinch of salt. Pour the dressing over the vegetables, mix well and, if you wish, sprinkle with 1/2 cup roasted salted sunflower seeds or toasted almonds, chopped or slivered.

  • 2 cups powdered sugar
Directions
In a bowl, cream butter and brown sugar until light and fluffy. Beat in cream and egg.

In a separate bowl, combine dry ingredients and add to creamed mixture. Fold in the apples, chips and nuts.

Drop by teaspoonfuls onto greased or lined baking sheet. Bake at 350 degrees 12-15 minutes.

NOTE: Be sure that the apple pieces are small. They are very good with or without the glaze!

For Glaze, in a bowl, mix together all ingredients. If too thick, add more cream to get the right consistency. Drizzle over cookies. I make half of the glaze recipe and only frost half of the cookies.

  • 4 large boneless country-style ribs

  • 1/2 cup barbeque sauce, bottled OR
  • make your own:
  • 1/2 cup ketchup
  • 1 tablespoon prepared mustard
  • 1 teaspoon molasses or honey
  • 1 teaspoon chili powder and/or garlic powder
  • 1/2 cup beer
  • 1 teaspoon cornstarch (optional, for thickening sauce)
Directions
  • Remove any large areas of fat from meat and salt and pepper both sides. Chop onions and spread over bottom of cooker. Put meat on onions. Mix the bottled barbeque with the beer; OR mix the ketchup, mustard, molasses (or honey) and chili powder (and/or garlic powder) together and then mix with the beer.
  • Pour the sauce mixture over meat, cover and cook on HIGH: 4-5 hours, on LOW: 8-10 hours. (Time for your particular cooker may vary somewhat from these times, so check for doneness a little earlier.)
  • To serve, lift meat and onions out with spatula. Pour liquid into a narrow jar or glass, let stand 1 - 2 minutes, and spoon off the fat that rises to the top.
  • Pour sauce over meat. If you wish to thicken sauce to make it more gravy-like, mix 1 teaspoon cornstarch into 1 tablespoon water and add to sauce. Boil in a small saucepan for 2-3 minutes, or until clear. Spoon over meat.

  • Clean the potatoes thoroughly but do not peel. Place the potatoes in a sealable bag and then pour in the vegetable oil.
  • Seal the bag and then toss the potatoes around in the bag until they are all evenly coated with oil.
  • Sprinkle the dry dressing mix in the bag, seal, and toss again until the potatoes are coated with the mix.
  • Place the potatoes in a 5 quart slow cooker, cover and cook on low for 8 to 9 hours or turn on high and cook for 4 to 5 hours.
  • The potatoes are done if tender when poked with a fork. The potatoes can be transferred to a bowl for serving or served in the crock.

  • While the casserole is baking, combine the crushed cornflakes or potato chips with the margarine.
  • After the 45 minutes baking time has elapsed, remove the casserole from the oven and stir; then spread on the topping mixture and bake another 15 minutes until bubbly.

  • 1/4 cup apple cider vinegar
  • 2 tablespoons olive oil
  • salt and pepper to taste
Directions
  • Cook bacon over medium heat in a skillet until crisp. Drain on paper towels. Reserve the bacon drippings in the pan.
  • To make the dressing, add garlic and raisins to the skillet, stirring until the garlic is pale golden, approximately 1 minute.
  • Stir in vinegar, oil, salt and pepper.
  • Bring to a simmer for one minute and then remove from heat.
  • Cook the broccoli florets and stems in a large pot of boiling, salted water for 4-5 minutes until crisp tender.
  • Drain broccoli and put in a large serving bowl.
  • Pour hot dressing over the broccoli.
  • Chop the cooked bacon and sprinkle over the top.
  • Toss to combine.

  • Preheat to 350 degrees F. Grease the bottom and sides of a loaf pan.
  • Mix 1st 5 ingredients until soft dough forms (lumpy). Place into oiled loaf pan.
  • Pour melted butter on the top. Bake 45-50 minutes.
  • When done, allow the bread to cool in the pan for 10 minutes; then remove from the loaf pan and place on a cooling rack. Cool before slicing.
TIP: Place something under it - it likes to boil over.

Heat the olive oil in a large, oven-proof skillet over medium heat. Stir in the garlic, and cook until lightly browned. Remove garlic, reserving for other uses.

Dip each pork chop into the egg mixture, then into the bread crumb mixture, coating evenly. Place coated pork chops in the skillet, and brown abut 5 minutes on each side.

Place the skillet and pork chops in the preheated oven, and cook 25 minutes, or to an internal temperature of 160 degrees F (70 degrees C).

  • 2 pounds red potatoes
  • 5 slices thick cut bacon (no flavor additives)
  • 5 sprigs green onion
  • 2 tablespoons olive oil
  • 1 teaspoon ground black pepper
  • 1 teaspoon sea salt
  • 8 ounces shredded cheddar cheese
  • 6 tablespoons sour cream
Directions
Begin by dicing potatoes, skin on or off, your choice.

Finely chop the green onion and bacon.

Toss the potatoes with olive oil, salt, pepper, onions and bacon.

Place a Dutch oven over medium-high heat (grill, directly over the charcoals; gas and stove-top, set gauges accordingly). When the Dutch oven is hot, place a few pieces of the bacon at the bottom of the pot so that the fat begins to coat the bottom of the pot. Once a thin layer of grease is on the bottom, pour the potato mixture into the pot, cover and wait. Stir occasionally to prevent sticking and cause even cooking.

When the potatoes are soft, remove Dutch oven from heat and add cheese. Stir until all of the cheese has melted. Serve with a dollop of sour cream.

  • PIE CRUST:
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup shortening (chilled)
  • 1/2 cup cold butter or margarine
  • ice water (6 to 8 tablespoons)
  • FILLING:
  • 1 can cherry pie filling
  • 1 teaspoon almond extract
  • 1 tablespoon sugar
Directions
PIE CRUST:
  • See the double pie crust recipe for instructions on preparing the pie crust. Follow the double pie crust recipe through placing the bottom crust in the pie plate. Trim the edges flush with the edge of the pie plate. Refrigerate the pie crust for the top until ready to use.
FILLING:
  • Pour the cherry pie filling into the bottom crust and distribute evenly. Sprinkle the almond extract and sugar over the top of the filling. Gently swirl through the pie filling with the tip of your finger to distribute the extract and sugar through the filling. They do not need to be completely mixed in the filling.
SPIRAL TOP CRUST:
  • Roll out the top crust in a long narrow strip. Cut the crust into long strips that are 3/8 to 1/2 inch wide. Starting with one strip in the center of the pie, begin to twist the strip and coil it around the center of the pie. Continue to twist the strip as you coil it around or it will begin to untwist. Work out towards the edge of the pie.
  • Add strips as needed to keep them in one continuous length by moistening the ends of each and pressing together to attach to the previous strip. Continue adding strips and coiling out towards the edge until the entire pie is covered. Work carefully so that you do not let the strips touch the filling until you are putting them into place. This will keep filling from getting on the strips where you do not want it.
  • Moisten the edge of the pie with water and then place a slightly wider strip tightly twisted around the edge. Press to seal.
  • Cut three leaf patterns from leftover crust and apply to the center of the pie. Sprinkle the crust lightly with sugar to give it sparkle and to add crispness.
  • Bake at 375°F for 45 minutes or until crust is golden brown.
