if a recipe calls for a 3 quart cooker can you cook it in a 5 qrt cooker?

Yes, you can but it is best if the slow cooker is at least half full for it to cook according to the recipe. If it is less than half full it may take less time for the dish to get done so for some recipes you would want to be careful that the food does not get overcooked. For most dishes it shouldn't be much of a problem but just be aware that your food will be done in a little less time.
I was planning to brine a turkey, but turkey purchased states already brined in salt solution. Some brine recipes have sugar & other herbs added.

I just wanted to say thank you for being more specific with the ingredient amounts. I appreciate that.
Can you be more specific with some of your recipes for example: Salted Nut Roll Bars recipe - 4 butter or margarine, is this 4 Tablespoons, 4 Cups or what.
Could you use beef instead?
How big a "package of Velveeta Cheese" do you add?

This could also be done with flour tortillas, too, right? And I wouldn't think you'd have the issues with breakage like with the corn tortillas.
