I've seen many recipes that call to heat at medium or high heat when cooking veal cutlets. Also to preheat oven to 145-350 F. when baking. Browning cutlets on the grill..ect. Should I be concern with internal temperature of veal cutlets?

Veal should be cooked in the same manner as beef. It can be cooked from rare to well done depending on how you prefer it but there are minimum temps at which it should be cooked. This could also be done with flour tortillas, too, right? And I wouldn't think you'd have the issues with breakage like with the corn tortillas.

Do you have suggestions for freezing this? Would it be ok to split the recipe and freeze half? Should the frozen half be thawed before cooking? Should it be frozen after cooking? If so, how do you suggest reheating.
