Most of the recipes are asking for white rice but I prefer using brown rices - is there a problem substituting?

You should be fine substituting brown rice in recipes calling for white rice. I have done this several times and have not noticed any problems. I like the texture of brown rice a little better and it is better for you.

This could also be done with flour tortillas, too, right? And I wouldn't think you'd have the issues with breakage like with the corn tortillas.
