When I plan a party for a large group, for occasions such as confirmations, graduations, anniversaries, and weddings, I always keep notes on what I serve for food and how much I make of everything. I make lists of when and what to make ahead of time and what needs to be done the day of the event. When the event is over, I always set down within a couple of days, so everything is fresh in my mind, and make notes on how many people were at the event, what I had for leftover food, what I ran out of, and if there was anything that I should have done differently. I also make notes on how things were setup and decorated. I keep a file of these notes and they have been extremely helpful when planning the next event. Does anyone have any tips on how they plan for entertaining large groups?

This could also be done with flour tortillas, too, right? And I wouldn't think you'd have the issues with breakage like with the corn tortillas.

Do you have suggestions for freezing this? Would it be ok to split the recipe and freeze half? Should the frozen half be thawed before cooking? Should it be frozen after cooking? If so, how do you suggest reheating.
