Spiced Chicken Breasts with Apple-Jalapeno Chutney

Here’s a chicken breast recipe that you might want to try: "Spiced Chicken Breasts with Apple-Jalapeno Chutney." It’s loaded with flavor and packs a bit of a punch with its moderate spiciness. This recipe had quite a number of ingredients—more than I usually want to use in a chicken recipe—but I would have to say that the trip to the supermarket to pick up the items I didn’t have on hand was well worth the time, because the results were fantastic.

Spiced Chicken Breasts with Apple-Jalapeno Chutney

The chicken is marinated in a mixture of orange juice, olive oil, fresh ginger, brown sugar, chopped scallions, ground coriander, ground cinnamon, salt, and pepper. I think the marinade alone makes the chicken quite tasty, so if you’d prefer not to spend the extra time making the chutney, you’ll still have a delicious dish without it. You can either bake the chicken breasts or grill them. I’ve made this recipe both ways and I’d have to say that grilling is the best, but then I’ve always been partial to grilled foods.

The apples and jalapenos in the chutney are combined with brown sugar, orange juice, apple cider vinegar, lemon juice, orange zest, a bay leaf, and some olive oil. I think this chutney has just the right balance of sweet, savory, and spicy flavors to complement the flavors of the marinated chicken breasts. You might want to make an extra batch of chutney so that you have some on hand to serve with other meals, especially when preparing other poultry dishes. It also goes quite well with pork.

I think it would be better to use a slow cooker liner bag rather than parchment paper because it would be easier to form it around the slow cooker.

G would be my first choice but since I don't think that is going to happen I am going with F also. I have too many tomatoes to eat and give away so all the tomato information you have available is great.
